Vodka Sour

2 oz - Vodka

1/2 oz - Simple Syrup

3/4 oz - Lemon Juice

3 - Dashes Carroll’s Irish Bitters- Cinnamon & Clove

Pour all ingredients into a shaker with ice. Shake and strain into a lowball glass with ice.


Cranberry Old Fashioned

2.5 oz of high proof Rye Whiskey

.5 oz of Demerara simple syrup

3- dashes of Carroll's Irish Bitters- Cranberry

Add Demerara simple syrup and Cranberry Bitters, Rye and ice in a mixing glass and stir till chilled. Pour into a rocks glass and garnish with cranberries and orange and a sprig of rosemary and cinnamon stick.


Pumpkin Spice Old Fashioned

2 oz high proof Rye

1/4-1/2 oz simple syrup

3 Dashes Carroll's Irish Bitters- Pumpkin Spice

1 tbsp. Pumpkin puree'

Add all ingredients to a mixing glass and stir until chilled.

Rim a rocks glass with caramel and dip in cinnamon & sugar.

Strain mixing glass into prepared rocks glass.

Garnish with a Luxardo cherry and a 1/2 tsp. of Luxardo syrup and a cinnamon stick with a spiral of orange peel.


Pineapple Old Fashioned

1oz Elijah Craig Rye

1oz Plantation Rum

3/4 oz pineapple juice

3-dashes Carroll's Irish Bitters-Cinnamon &Clove

2-dashes Carroll's Irish Bitters-Cherry

Add all ingredients to a rocks glass and stir.

Add ice and stir again.

Garnish with grilled pineapple wheel with a Luxardo cherry picked through the middle, a orange peel expressed & Luxardo cherry.


Cherry Yum

1-1/2 oz Builders Gin

3/4 oz Luxardo Sour Cherry Gin

3 dash's Carroll's Irish Bitters -Cherry

1/2 lime wedge squeezed

Topped off with Fever Tree Elderflower Tonic Water

Garnished with a lime spiral.


Hell’s Kitchen

2oz Bourbon of choice

1/2 oz Antica Formula Sweet Vermouth

1/2 oz Amaro

4-dashes Carroll’s Irish Bitters- Cherry

4- dashes Carroll’s Irish Bitters- Tobacco

Put all ingredients in a shaker with ice and shake vigorously till chilled. Pour into a coup or martini glass and garnish with an orange peel.


Emerald

2 oz Irish Whiskey

1 oz Sweet Vermouth

3-Dashes Carroll’s Irish Bitters-Burnt Orange

Add everything into a mixing glass with ice and stir for 15-20 seconds. Strain into a small coupe glass and garnish with a Brandy Cherry.


Ginger Old Fashioned

1 oz. Ginger Liqueur

1-1/2 oz. Bourbon

3-Dashes Carroll’s Irish Bitters-Tobacco

2 Orange peels

In a stirring pitcher, combine all ingredients, expressing the orange peels over the glass before putting them in. Stir for 30 seconds. Strain into a a chilled cocktail glass. Garnish with a toasted orange peel.


Blackberry Smash

2 oz Bourbon

1 oz Lemon Juice

1/2 oz Simple Syrup

2-Dashes Carroll’s Irish Bitters-Derby Mint

3-Plump Blackberries

Muddle the Blackberries with the Lemon Juice, Simple Syrup and Bitters in a rocks glass. Add ice and then the Bourbon and stir for 15-20 seconds, garnish with Blackberry and an Orange peel spiral.


Bourbon cherry Limeade

2-1/2 oz Bourbon

1/2 oz Maraschino Liqueur

1/2 oz Lime Juice

3-Dashes Carroll’s Irish Bitters- Cherry

Add everything to a rocks glass with ice and stir for 15-20 seconds. Garnish with a lime wheel and cherry.


Minty Mule

1-1/2 oz vodka

1/2 oz lime juice

2-Dashes Carroll’s Irish Bitters-Derby Mint

Fever Tree Ginger Beer

Pour vodka and lime juice into a copper mug; add ice cubes and ginger beer. Stir to combine.


Fig Manhattan

2 oz Bourbon

1/2 oz Fig Syrup

1/2 oz Sweet Vermouth

2- Dashes Carroll’s Irish Bitters-Tobacco

Add ingredients to mixing glass. Add ice. Stir until well chilled. Strain into chilled coupe glass. Garnish with black figs


Bloody Caesar

2 oz Vodka (or more)

4 oz Clamato Juice

1/2 oz Lemon Juice

2-Dashes Worcestershire Sauce

3-Dashes Carroll’s Irish Bitters-Chocolate Habanero

3-Dashes Carroll’s Irish Bitters-Celery

1-Dash Tabasco Sauce

1/2 tsp of Horseradish (optional)

Build the drink one ingredient at a time in a shaker. Add ice and shake till chilled. Add ice to a rimmed pint glass. Strain shaker into the rimmed glass with ice and garnish with your imagination.

Rimming salt recipe

1/4 c. kosher salt

1 T. celery salt

1 T. cumin

1 T. granulated garlic (not garlic salt)

1 T. smoked paprika

1 tsp. black pepper

1/4 tsp. dry mustard powder

1/4 tsp. dry powdered ginger

Optional ingredients - coriander, wasabi powder, Old Bay Seasoning, chipotle powder, cayenne pepper, ancho chili powder, cinnamon, nutmeg, sweet paprika, lemon pepper, any variety of smoked salts, Thai basil, rosemary, thyme

In a small bowl, whisk together kosher salt, celery salt, cumin, granulated garlic, smoked paprika, black pepper, mustard powder, and powdered ginger. Store in a jar or container with a tight lid.

To rim your glass when making Bloody Caesar or Bloody Mary, place rim salt on a small plate. Rub the cut edge of a lemon wedge around the rim of a glass to moisten. Take care to press the glass rim straight down into the salt, and then pull it straight up out of the salt. Do not twist the glass while it’s in the salt, as this often causes the rim salt granules to release from the rim.

High Plains Drifter

2 oz Rye (Rittenhouse recommended)

1/2 oz amaro nonino

1/2 oz Sweet vermouth

2-Dashes Carroll’s Irish Bitters-Celery

Combine Carroll’s Irish Bitters-Celery, Rye, amaro nonino, and sweet vermouth into a mixing glass with ice and stir for 30 seconds. Strain into a chilled Coupe glass and garnish with a grapefruit twist.



Glowing in Rio

1-1/2 oz Cachaca

3/4 oz Ancho Reyes Verde

3/4 oz pineapple juice

1/2 oz lemon juice

3-Dashes Carroll’s Irish Bitters-Chocolate Habanero

1/2 oz simple syrup

1 egg white

Add all ingredients into a shaker and dry shake to blend. Add large ice cubes and shake for 15 seconds till chilled. Strain into a chilled Nick and Nora glass and garnish with a lemon spiral and a few drops of Carroll’s Irish Bitters-Chocolate Habanero on top.


From Eden

1 oz. Bonded bourbon

1 oz. Apple brandy

0.75 oz. orange juice

0.5 oz. Rich spiced apple cider syrup

1 Dash Carroll’s Pure Vanilla Extract

3-Dashes Carroll’s Irish Bitters-Cinnamon & Clove

4 drops 80:20 saline solution

1 egg white

Combine ingredients in a shaker with no ice & dry shake. Add ice & wet shake. Double strain into a chilled glass. Garnish with dehydrated blood orange wheel.


Raspberry Cheesecake Martini

In a shaker, add

1-1/2 oz Vodka

1/2 oz lemon juice

1/2 oz Chambord

1/2 oz simple syrup

1/2 oz heavy whipping cream

1-Dash Carroll’s Pure Vanilla Extract

2- Dash’s Carroll’s Irish Bitters- Cherry

Add Ice and shake for 15 seconds.

Pour into a crushed graham cracker rimmed martini glass and garnish with a fresh raspberry on a toothpick.



Tipperary

1 1/2 oz - Jameson Whiskey

3/4 oz - Red Vermouth

1/2 oz - Green Chartreuse

2 - Dashes Carroll’s Irish Bitters- Celery

Add all ingredients in a mixing glass with ice and stir. Strain into a chilled coupe glass and garnish with cherry on a pick


Spicy Chocolate Old Fashioned

2.5 oz Rye Whiskey

3/4 oz Irish Cream liqueur

3-Dashes Carroll's Irish Bitters- Chocolate Habanero

2-Dashes Carroll's Irish Bitters- Burnt Orange

Add all ingredients in a mixing glass. Add ice and stir till chilled.

Drizzle Chocolate syrup in a stemless wine glass and add a ice spear.

Strain mixture over ice spear.

Garnish with a toasted orange wheel with a Luxardo cherry skewered in the center.


Relaxing Horizon

1 ½ oz tequila

¾ oz Peach Liqueur

½ oz Lustau Cream Sherry

½ oz Cocchi Americano

1 oz fresh orange juice

1 -dash lemon juice

3-Dashes Carroll’s Irish Bitters- Burnt Orange

Lemon wheel, for garnish

Combine ingredients into a shaker and shake vigorously.

Strain into a highball glass over fresh ice.

Serve with a lemon wheel and straw.


The Cranberry Old Fashioned

The Irish Smokeberry

1.5 oz High proof Irish Whiskey.

2-dashes grenadine.

3 -dashes Carroll's Irish Bitters- Tobacco

Top it off in a rocks glass with Guinness.

Garnish with a fresh skewered blackberry.

2 oz Rye Whiskey  

1oz Semi Sweet Amero

Clover Club

2 oz Gin

3/4 oz Lemon Juice

2 oz Bourbon

Apple Daze

2 oz Whiskey

1/2 oz Honey

1/2 oz Lemon Juice

3-Dashes Carroll’s Irish Bitters-Cinnamon & Clove

Apple Cider

In a rocks glass, add Honey and Lemon Juice and microwave for 5 seconds. Add Whiskey and stir vigorously or 15-20 seconds. Add Bitters and ice, top off with Apple Cider and stir again for 10-15 seconds. Garnish with an apple slice and cinnamon stick


Spicy Mezcal Margarita

2 oz Mezcal

1/2 oz Cointreau

3/4 oz freshly-squeezed lime juice

4-Dashes Carroll’s Irish Bitters- Chocolate Habanero

1/4 oz agave nectar

Add everything to a mixing glass with ice and stir for 15-20 seconds. Rim a cocktail glass with lime and salt, add ice. Strain mixing glass into prepared glass and garnish with a lime wedge and jalapeno slice.

1 oz empress gin

1 oz Joven mezcal

1/2 oz elderflower liqueur

1/4 oz chartreuse

Stir and strain into chilled coupe

Mezcal and gin play really nice together. The elderflower brings a little balance and as always chartreuse adds interest


Jane Russell

1-1/2 oz Russell’s Reserve rye

1/2 oz Rittenhouse rye

1/4 oz Benedictine

1/4 oz Carpano Antica Formula vermouth

1/4 oz Grand Marnier

2-Dashs Carroll’s Irish Bitters-Chocolate Habanero

Add the Russell’s Reserve rye, Rittenhouse rye, Benedictine, Carpano Antica Formula vermouth, Grand Marnier and mole bitters to a mixing glass with ice and stir until well-chilled. Strain into a coupe or cocktail glass and garnish with and orange twist.


Amontillado Sherry Manhattan

2 oz Bourbon/Whiskey/Rye (Rye prefered)

1oz Amontillado Sherry

2-Dashes Carroll’s Irish Bitters-Cinnamon & Clove

1-Dash Carroll’s Irish Bitters- Burnt Orange

Start by dashing bitters into the cocktail mixing glass. Add Rye and Sherry. Fill with ice and use a bar spoon to stir for 30 seconds or until icy cold.

  • Strain cocktail into a coupe or martini glass. filled with ice (or over a large cube). Express an orange twist over the cocktail and use as a garnish. Cheers!



Classic Whiskey Sour

2 oz. Whiskey/Bourbon

¾ oz. fresh lemon juice

¾ oz. simple syrup

2-3 dashes of Carroll’s Irish Bitters- Black Walnut, Cinnamon & Clove or Tobacco

1 egg white (optional but recommended)

Add Carroll’s Irish Bitters first, 2 oz. whiskey, ¾ oz. fresh lemon juice, and ¾ oz. simple syrup to a cocktail shaker. If using 1 egg white, add to tin and seal. Shake without ice for 5 seconds to emulsify egg white. Add ice and shake vigorously for 15 seconds. Strain into a rocks glass with fresh ice or a coupe (no ice). Garnish with an orange slice and maraschino cherry.

Many will argue that a sour should be served up in a coupe glass, but presentation is the last step in customizing your personal best whiskey sour. Serve it up or on the rocks, with or without egg white, and whatever garnish speaks to you. Go with your heart.


The Bitter Bramble

1.25oz London Dry Gin

3/4 oz Campari

3/4 oz fresh Lemon Juice

2-Dashes Carroll’s Irish Bitters-Burnt Orange

3/4 oz Simple Syrup

4-5 Muddled Raspberries*

In a mixing glass, muddle raspberries with Carroll’s Irish Bitters-Burnt Orange. Add all other ingredients and stir with a large cube of ice. Strain over pebble ice/crushed ice in a double rocks glass and garnish with a lemon wheel & raspberries

*While the recipe generally calls for raspberries, blackberries or strawberries work just as well.


Foe Hammer

1 oz Cask Strength Bourbon

1 oz Aged Navy Proof Jamaican Rum

1 oz sweet vermouth

1 oz pineapple syrup (1:1 pineapple juice & cane sugar)

3/4 oz lime juice

3-Dashes Carroll’s Irish Bitters-Cinnamon & Clove

2 drops saline solution

Add all ingredients into a shaker with one large ice cube. Shake for 15 seconds until chilled. Strain into a ice filled, chilled coupe glass and garnish with ground nutmeg.


Bourbon Old Fashioned Smoked Cream Cheese

8 oz. block of Cream Cheese

12 oz. Bag of Frozen Cherries

1/3 cup of brown sugar

8-10 Dashes Carroll’s Irish Bitters-Cinnamon & Clove

1/2 cup of bourbon

2 Tbsp sweet BBQ rub (your choice)

Club or Ritz Crackers

METHOD:

  1. Score cream cheese so that the smoke will penetrate the block.

  2. Top the cream cheese with BBQ Rub.

  3. Smoke Cream Cheese in a small Iron Skillet at 250 Degrees for two hours.

  4. Whisk together cherries, brown sugar, bitters and bourbon in a medium bowl

  5. Pour mixture into pan and cook on medium until reduced about 20 minutes

  6. Once the cream cheese is done, pour on the cherry mixture and serve.


Jasmin

1 1/2 oz - Gin e

3/4 oz - Fresh Lemon Juice

1/4 oz - Campari Lemon Twist

2 - Dashes Carroll’s Irish Bitters -Burnt Orange

Pour all ingredients into a shaker with ice. Shake and strain into a chilled cocktail glass. Garnish with a lemon twist.


Bangkok Old Fashioned

1.5 oz of Bacardi 8 Rum

3/4 oz oz of Cruzan 137 proof (hurricane proof) Rum

1/2 oz Demerara syrup

3-Dashes Carroll's Irish Bitters- Garam Masala

Put all ingredients in a mixing glass.
Add ice and stir until chilled.
Strain into rocks glass with large ice cube. (any ice will work)
Garnish with orange and lemon peel with a slice of ginger.


Gentleman Daily

1-1/2 oz Gin

¾ oz Sweet Vermouth

½ oz Maraschino liqueur

3 -dashes Carroll’s Irish Bitters Garam Masala

Combine ingredients with ice and stir for 8-10 seconds. Strain into a coupe or cocktail glass. Garnish with an orange twist & Luxardo cherry.


Negroni Recipe 

 1 oz London Dry Gin

 1 oz Sweet Vermouth

 1 oz Campari

 3 -dashes Carroll’s Irish Bitters- Burnt Orange

Orange Peel for garnish

Combine ingredients in a mixing glass, add ice and stir gently for 10 seconds. Strain into a rocks glass over ice.


Purple Pear

2 oz Builders Gin

1/2 oz Desert Pear syrup

3 -Dashes Carroll's Irish Bitters-Lavender

Top it off with Fever Tree Indian Tonic Water

Garnish with lime and a fresh sprig of lavender.


BROWNED BUTTER OLD FASHIONED

2 Cups Rare Breed, and 4 oz un-salted butter Brown the butter in a large saucepan over med heat until it begins to brown. It will start to smell nutty. Let sit until tepid. Mix with bourbon in mason jar. Shake every 15 min for 3 hours then refrigerate for three days. Strain twice through coffee filter and save butter for cinnamon rolls or bread pudding.

This old fashioned:

2.5 oz browned butter bourbon,

3 -dashes Carroll's Irish Bitters- Burnt Orange

2 -dashes Carroll's Irish Bitters-Cinnamon & Clove

1/4 oz homemade Demerara syrup

Add all ingredients to a mixing glass with ice and stir for 15 seconds. Strain into a rocks glass over a large ice spear or cube, garnish with a Luxardo cherry and a small orange twist.


Gimlet

2 oz Gin

3/4 oz Lime Juice

3/4 oz Simple Syrup

3- Dashes Carroll’s Irish Bitters- Lavender

Add everything in a shaker with ice. Shake for 10-15 seconds and strain into a coupe glass and garnish with a lime wheel.


Fitzgerald Daiquiri

1-1/2 oz Pineapple Rum

1/2 oz Ginger liqueur

3/4 oz Lime Juice

2 Bar spoons Dry Curicoa

2-Dashes Carroll’s Irish Bitters- Garam Masala

2-Dashes Carroll’s Irish Bitters-Burnt Orange

Add everything into a shaker with ice and shake for 20 seconds. Strain into a large coupe glass and garnish with a dehydrated lime wheel.



Russell’s Black Walnut Old Fashioned

2 oz High Proof Rye Whiskey

1/2 oz Honey

1/2 oz Lemon Juice

3-Dashes Carroll’s Irish Bitters-Black Walnut

Add everything into a mixing glass and stir for 15-20 seconds. Add ice and stir again for 15 seconds. Strain into a rocks glass with ice and garnish with Orange peel.


The Midnight Cowboy

2 oz Yellowstone Bourbon

1/4 oz Amaro

2-Dashes Carroll’s Irish Bitters -Tabacco

2-Dashes Carroll’s Irish Bitters- Walnut

Add everything in a rocks glass with ice and stir 15-20 seconds, garnish with an orange twist


Mint Julep

2-1/2 oz Bourbon

2-Sugar Cubes or 1/2 oz Simple Syrup

3-Dashes Carroll’s Irish Bitters- Derby Mint

In a Julep Cup, add sugar cubes and muddle with the bitters together. If you don’t have sugar cubes just add the bitters and simple syrup together. Add crushed ice and stir until the cup is frosted on the outside. Add the bourbon then pack the glass tightly with crushed ice in a dome shape on top. and garnish with a mint sprig and a few drops of bitters (optional).

MINT SPRIG GARNISH

Firmly slap the mint sprig on the back of your hand before garnishing; this releases the oils to make the mint more aromatic.


Medieval Eggnog

1-1/2 oz High Proof Bourbon

3/4 oz Rum

3/4 oz Amontillado Sherry

3/4 oz Cognac

2-Dashs Carroll’s Irish Bitters- Pure Vanilla Extract

1 tsp sugar

1/2 tsp Orgeat

1 tsp Nutmeg

2 eggs

6oz whole milk

4oz heavy cream

Combine all ingredients in a quart mason jar and mix well. Refrigerate overnight and shake before serving.


The Celery Stalker


1 oz. Gin of choice

½ oz. fresh lime juice

½ oz. simple syrup

2-Dashes Carroll’s Irish Bitters-Celery

Sparkling wine, to top

Combine gin, lime juice, simple syrup, and celery bitters in a shaker filled with ice. Shake until chilled, then double-strain into a chilled cocktail glass. Top with the sparkling wine, garnish with a cucumber slice, and serve.


Jersey Lightning

2 oz. apple brandy (such as Laird's Apple Brandy Bottled in Bond)

1 oz. sweet vermouth (such as Cocchi Vermouth di Torino) 

2-Dashes Carroll’s Irish Bitters-Cinnamon & Clove

Combine 2 oz. apple brandy, 1 oz. sweet vermouth, and 2 dashes Carroll’s Irish Bitters-Cinnamon & Clove in a mixing glass with ice. Stir until well chilled, 20–25 seconds, then strain into a coupe. Garnish with an orange twist,


GUINNESS ‘Midnight In Dublin’ iced coffee

2 oz Guinness Draught Stout

1-1/2 oz Irish Whiskey

2 oz cold brew coffee

1-Dash Carroll’s Irish Bitters- Cinnamon & Clove

3/4 oz simple syrup

Combine all ingredients in a mixing glass and briefly stir. Pour over ice in a Collins glass, add a float of cream and a wee bit of grated cinnamon on top


Cointreau Cranberry

1 oz Cointreau

3/4 oz fresh lemon juice

2 oz cranberry juice

3-Dashes Carroll’s Irish Bitters- Cranberry

3/4 oz simple syrup

Add all ingredients in a shaker. Do a quick stir and add large ice cubes. Shake vigorously for 15 seconds until chilled. Strain into a chilled coupe glass and garnish with blueberries on a pick.


Linger

1-1/2 oz Pisco

1/2 oz Dry Vermouth

3/4 oz Lemon Juice

1/2 oz. Cranberry Syrup (2:1 cranberry juice : cane sugar)

3-Dashes Carroll’s Irish Bitters-Cranberry

3-5 drops of Carroll’s Irish Bitters-Cherry

1 egg white

The leaves of one Rosemary sprig muddled

In a shaker, add the rosemary and Carrolls Irish Bitters-Cranberry and muddle to release to oils. Combine all ingredients except the Carrolls Irish Bitter-Cherry in shaker and dry shake for 15 seconds. Add large ice cube and shake for another 10 seconds, double strain in a chilled coupe glass. Garnish with three fresh cranberries and a tiny rosemary sprig stuck into one of the cranberries. Place 4-5 drops of Carrolls Irish Bitters-Cherry on top of foam. Using a toothpick create hearts or other shapes by drawing the toothpick through the bitter.


Pisco Cup

1 oz Pisco

2 oz Ruby Port

2-Dashes Carroll’s Irish Bitters-Burnt Orange

Fill a cocktail shaker with ice. Add the pisco, port and bitters and stir briskly for 20 seconds. Strain into a chilled cocktail glass and garnish with the orange twist.


Grasshopper

1 oz créme de menthe

1 oz créme de cacao

1 oz heavy cream

2-Dashes Carroll’s Irish Bitters-Derby Mint

3 drops green food coloring (optional)

3 crushed candy canes (for rim, if desired)

1 tablespoon vanilla frosting (for rim, if desired)

Coat the rim of a coupe glass with vanilla frosting and dip in a plate of crushed candy canes to rim, if desired.

Combine all ingredients in an ice-filled cocktail shaker and shake for 20 seconds, until frosted on the outside of the shaker. Strain into coupe.
